Discovering Extra Virgin Olive Oil– Second Edition

Why take part in an introductory olive oil course? To truly understand what we put on our plates every day—the essential ingredient of the Mediterranean Diet: extra virgin olive oil.
With this goal in mind, we present our Introductory Course on Extra Virgin Olive Oil Tasting, in collaboration with OLEA – Organizzazione Laboratorio Esperti e Assaggiatori.
On March 20, 2025, the second edition of Discovering Extra Virgin Olive Oil, will take place—an immersive experience dedicated to exploring the different types of olive oil, learning how to taste it properly, recognizing high-quality oil versus poor-quality oil, and selecting the perfect oil to pair with a dish. The course will also include historical insights and technical information about olive cultivation.
Discovering Extra Virgin Olive Oil will be held in our headquarter on Thursday, March 20, from 8:00 PM to approximately 11:00 PM. The course is divided into two parts: theory and practice.
Theory:
• The olive tree and olive oil: between history and legend – olive tree cultivation
• Olive harvesting – oil extraction and storage
• Sensory analysis and oil classification
• Olive oil and health – using olive oil in cooking
Practice:
• Guided tasting of at least four educational olive oils
• Tasting of typical products paired with representative olive oils
Throughout this journey, we will be guided by OLEA's expert instructors:
– Renzo Ceccacci, President of OLEA
– Giorgio Sorcinelli, Director of OLEA
– Costantino Piermaria, Secretary of OLEA
