Ancient traditions define Anima Mundi as the great unifier of all things – a universal meaning that connects every aspect of nature. This is the spirit and ambition of our passito wine: to represent the beating heart of our Ripani Hills in every sip.
A bright yellow colour with hues of amber, intense on the nose and smooth on the palate. Anima Mundi is made using the traditional method of drying indigenous passerina grapes, which are carefully selected in a meticulous process that controls every production phase: from pruning through to harvest.

Wine varieties:Passerina
Average yield per hectare: 4/5 tons of grapes.
Organoleptic characteristics: Bright yellow colour tending towards amber. Intense and persistent bouquet with warm hints of honey and dried fruits. Mellow, balanced and velvety taste with undertones of nuts, candied orange and almonds.
Vinification: Careful selection of the best grapes, double drying, before in the vineyards then in little baskets in the cellar according to tradition, fermentation and ageing in small barrels.
Harvest time: First days of November.
Picking method: By hand.
Serving suggestions: Excellent with sweets, chocolate biscuits and we suggest as an accompaniment to mature cheeses.
Serving temperature: We recommend serving at 12/14°.
