Terra: a solo from Tenera Ascolana
Terra is an ambitious and important project for us. It’s an organic and monovarietal oil, which means it’s made solely from Tenera Ascolana olives – the same variety used for Ascoli Olives.
Despite its size, this cultivar has a very low olives to oil ratio, which is why its main use is for cooking. But Ascolana Tenera oil has something unique to offer. Golden yellow in colour with delicate green hues, it is delicate on the palate with moderate fruitiness and hints of grass and tomato.
With a balance of bitter and spice, the excellent characteristics of this oil make it perfect for legume and grain soups, appetisers, raw fish, shellfish, white meats and salads. Terra makes our ‘ciavarro’ – a local legume soup made here in Ripatransone – truly irresistible.
